Pralines & Cream Fudge

It's the day before Thanksgiving, and I have the perfect recipe to give to your guests as party favors. Or any time of the year. It's pralines and cream fudge, made with caramel, white chocolate, and pecans. Yum...

This makes a 8 x 8 tray of fudge, which depending on how you cut it makes 36-64 pieces. I cut mine into 36, because I like a little bit bigger pieces of fudge, but you can do this however you want. It's a pretty narrow fudge, though, so keep that in mind when you're planning how to chop it up.

Okay, so this is a really simple recipe, but one tip I have for you guys is that you have to use sweetened condensed milk. There is no substitute. Evaporated milk won't work because there's no added sugar in this recipe and it therefore wouldn't be sweet enough. Just make sure you get that one ingredient right; the rest are easy to follow.

The way I'm presenting these is I'm putting them out on a platter when I serve dessert. That way people can help themselves. I also think they'd be great party favors, as I mentioned above. Especcially if you have them in my cute polka dotted containers.

So, here's the recipe!

INGREDIENTS 14 oz sweetened condensed milk 3 cups white chocolate 1 1/2 cup caramel pieces 3 tbsp water 1/2 cup coarsely chopped pecans

Line a 8 by 8 inch baking dish with parchment paper.

On medium heat in a saucepan, stir together sweetened condensed milk and white chocolate until smooth and completely melted. Remove from heat. In a separate bowl, melt caramels and water until smooth. Stir in pecans.

Pour half of the white chocolate mixture into the lined pan. Follow with the caramel and remaining white chocolate. Swirl gently with a knife. Transfer into refrigerator to set until firm, 30-60 minutes. Alternatively, let sit at room temperature until firm, about 4 hours.

Cut into 1 inch pieces and remove from pan.
